Tavë Krapi (Baked Carp Casserole) is a highly prestigious, historic fish specialty that commands absolute reverence within Kosovo's regional culinary landscape. The architecture of Tavë Krapi is a magnificent exercise in slow baking. Enormous wild carp caught from clean freshwater sources are cleaned and laid into a large, shallow metal or clay baking pan.
