Tarator is an exceptionally popular cold yogurt and cucumber drubj that bridges the gap between a refreshing salad and a chilled summer soup. Rooted deeply in the regional culinary cross-currents of the Ottoman Empire, Tarator has evolved into an indispensable hot-weather staple in Kosovo, valued for its immediate cooling properties and digestive benefits.


The preparation is incredibly quick and simple, relying on the exceptional quality of local Balkan dairy. Crisp cucumbers are either finely diced or grated, then folded into a base of cold, creamy liquid yogurt or strained sour milk. The mixture is heavily infused with crushed garlic, a drizzle of sunflower or olive oil, cold water to adjust the consistency, and occasionally a splash of vinegar or a garnish of fresh dill.


Tarator is consumed almost exclusively during the scorching summer months. It is served chilled in small bowls or glasses, either as a refreshing appetizer, a side dish alongside heavy baked mains, or even enjoyed on its own as a light, hydrating midday snack. It is heavily featured on the summer menus of traditional restaurants in lowland cities like Gjakova, Prizren, and Pristina.
