Revani
Revani is a beloved, syrup-soaked sponge cake that has held a prominent place in Kosovo’s culinary tradition since the Ottoman era. According to historical lore, the dessert was created by palace cooks to celebrate the Ottoman conquest of Persia's Revan (modern-day Yerevan) in the 17th century. It quickly spread throughout the Balkans, becoming a comforting staple in Kosovar households. Unlike lighter European sponge cakes, Revani gets its unique, beautifully grainy texture from the extensive use of semolina flour.
The cake is baked until it achieves a deep, golden-brown crust, after which a cold citrus-scented sugar syrup is poured over it while hot, allowing the sponge to absorb the liquid completely without losing its structural integrity.
Revani is traditionally prepared for family gatherings, weekend meals, and during the autumn and winter months when its dense warmth is most appreciated. It is easily found in traditional pastry shops across Kosovo, where it is sliced into uniform squares and frequently garnished with a light dusting of shredded coconut or crushed nuts.
