In legacy home cooking, a variation called 'Qofte shtëpie' (home style) includes adding stale bread soaked in milk into the meat mix to make the patties extra soft and tender.
Qofte
Qofte represents another foundational pillar of Kosovo's deeply rooted minced-meat gastronomy. Derived from the Persian word 'kufta' and brought to the region during the Ottoman expansion, Qofte evolved from an exotic eastern specialty into an everyday home-style and tavern staple across Kosovo, prized for its robust seasoning and versatility.
Unlike the cylindrical shape of Qebapa, traditional Kosovar Qofte are shaped into flattened round patties or oblong logs. The minced beef mixture is heavily enhanced with finely chopped onions, crushed garlic, and fresh local parsley, and is intensely spiced with dried red paprika and oregano. They are pressed gently and grilled over charcoal, creating a deeply caramelized exterior with a highly aromatic, savory center.
Qofte are consumed heavily year-round as a quick, satisfying meal. They are equally popular as an affordable street food served inside flatbread and as a premium item on a shared 'skara' (mixed grill) platter during family banquets.
Excellent legacy versions can be found in the old bazaar sectors of Peja and Gjakova.
