Pleskavicë is a legendary giant of Balkan grill culture, holding an incredibly prominent position on every menu across Kosovo. Inherited from ancient regional minced-meat traditions and refined through decades of competition among local grill masters, this massive, round spiced beef patty represents the peak of hearty, celebratory comfort food in Kosovar society.


The crafting of a true Pleskavicë requires top-tier butchery skills. Premium lean beef is finely minced and kneaded thoroughly with a precise ratio of beef tallow, ice water, and salt, then left to cure to develop its iconic springy texture. It is flattened into a large disc and grilled over fierce charcoal. 


The absolute pinnacle version is 'Pleskavicë e Sharrit' (Sharr style), which features a pocket stuffed generously with sharp, melting local Sharr cheese that oozes out when sliced.


Pleskavicë is consumed enthusiastically year-round as a substantial lunch or dinner. It is a social food, often ordered as a centerpiece main or shared platter item. While available in every single city, the historic grill capital of Prizren and the mountain towns along the Sharr range are internationally famous for mastering the cheese-stuffed iterations.
