During Ramadan, Kosovar bakers add a special egg-and-water wash called 'Shtrish' over the pitalka dough right before baking, giving it a unique glaze and ensuring the aromatic black caraway seeds stick perfectly to the blistered crust.

Pitalka

Pitalka (historically associated with Pitalka e Ramazanit) is a legendary, hyper-localized flatbread that holds an immense spiritual and cultural position within Kosovo's urban baking heritage. Rooted deeply in old Ottoman bread crafts but perfected over centuries by legacy bakers in specific Kosovar towns, this hollow, fire-blistered bread is an absolute symbol of community, tradition, and seasonal celebration. 


The baking process is an exhilarating display of high-heat culinary art. A high-hydration wheat dough is portioned and flattened by hand into oval or circular discs, then scored lightly on top with a distinctive checkerboard crosshatch pattern. The dough is launched immediately onto the stone floors of massive brick ovens fueled by intense wood fires. Due to the extreme heat, the bread puffs up instantly like a balloon, creating a large internal pocket, an incredibly soft interior, and a deeply charred, smoky, and blistered outer crust often enhanced with black caraway (nigella) seeds. 


While available year-round in specialized historic bakeries, Pitalka is culturally famous for its absolute dominance during the holy month of Ramadan. As sunset approaches, massive, winding lines of locals form outside the oldest wood-fired bakeries in cities like Gjakova, Prizren, and Pristina, waiting eagerly to capture the bread while it is still steaming hot and intensely aromatic.
