Përpeq (or Përpeqi) is a highly rare, ultra-traditional open-faced savory cheese tart that stands as a true hidden gem of Kosovo’s ancient highland gastronomy. Developed by pastoral shepherding communities in the rugged mountainous borders of northeastern and central Kosovo, this rustic dish showcases a brilliant minimalist approach to baking, relying entirely on the extreme purity of fresh farm dairy staples and wood-fired heat.
The architecture of Përpeq is beautifully distinct from enclosed pies. A single layer of handmade wheat dough is rolled out and pressed into a shallow round pan, with the edges folded up slightly to form a rustic rim. The center is then filled generously with a rich, velvety liquid custard made from a heavy mixture of fresh white cheese, thick local cottage cheese (gjizë), eggs, sour cream, and a substantial amount of melted farmhouse butter. The tart is baked uncovered in a high-heat wood oven, causing the cheese custard to puff up, caramelize into deep brown spots, and develop a rich, soufflé-like texture encircled by a crunchy crust.
Përpeq is traditionally prepared as a comforting, high-energy farmhouse meal for breakfast or lunch, celebrated during livestock harvest periods. Because it requires highly specific, unpasteurized local dairy blends, it is a rare commercial find, preserved intensely in rural homestays, mountain eco-lodges, and specialty heritage restaurants in the Gollak and Llapi regions.
