The name Bakllasarm is derived from the Turkish words 'baklava' and 'sarmak' (to wrap), literally meaning 'wrapped baklava style,' referencing the layered folding technique used before it is drenched in garlic yogurt instead of sweet syrup.

Bakllasarm (or Bakllasarem) is a magnificent, highly unique traditional savory pastry that showcases the deep Balkan ingenuity for transforming simple dough into an intensely flavorful comfort feast. Originating as a rustic village meal to feed large farming households, this dish is a direct relative of layered pastry traditions but stands completely apart due to its rich, garlicky yogurt dressing. 


The preparation begins by rolling out thin layers of homemade pastry dough, which are brushed with melted butter, rolled or folded into dense, hollow rounds, and baked in a large shallow pan until beautifully crisp and flaky. Immediately after coming out of the oven, while still sizzling hot, the pastry is drenched in a massive volume of warm, heavily salted yogurt or sour milk (kos) that has been intensely infused with crushed raw garlic and melted butter with red paprika. The dry, flaky layers absorb the liquid completely, transforming into a rich, velvety, garlic-saturated delicacy. 


Bakllasarm is treated as a highly comforting, heavy meal eaten primarily for a long weekend breakfast or family lunch. It is served piping hot, often directly from the large baking pan. While made across the nation, rural households in the central fields of Kosovo and the regions surrounding Podujeva are especially celebrated for keeping this old-school garlic pastry tradition alive.
