Ajvar

Red Pepper Relish

True traditional Ajvar requires constant, uninterrupted stirring for up to five or six hours straight over a hot fire to prevent the sugars in the peppers from burning.

Ajvar is often called the 'Balkan caviar' and stands as one of the most culturally significant food traditions in Kosovo. This rich, smoky relish is made primarily from roasted red horn peppers (known locally as ajvarka) and occasionally eggplant. 


The preparation of Ajvar is a massive, communal autumn ritual that unites families and neighborhoods across Kosovo, marking the transition from summer to winter. 


The process is incredibly labor-intensive. Hundreds of kilograms of peppers are roasted over open outdoor wood fires, peeled by hand, cleared of seeds, and ground. The mixture is then slow-cooked for hours in enormous shallow pots, continuously stirred until the water completely evaporates and the oil separates, yielding a thick, spreadable cream with a deep, concentrated sweetness and smoky undertone.


Ajvar is a versatile winter staple stored in glass jars and consumed daily across all regions. While made domestically everywhere, the rural regions surrounding Rahovec and Mamusha are famous for producing some of the highest-quality peppers used in the process. It is eaten as a spread, a side dish, or a condiment with almost every meal throughout the colder months.
